Grilled Tofu With Miso Sauce Recipes

Ingredients :

500 g



Miso Sauce :

100 g


1 tablespoon

4 tablespoons

firm tofu

toasted sesame seeds for sprinkling

bamboo leaves, to garnish



egg yolk

each sake, mirin and sugar


juice 1/2 lime

Method :
  1. Wrap each tofu cake in a tea towel and place a light weight, such as a plate, on top to squeeze out water.
  2. Leave to stand for at least 1 hour.
  3. To make sauce, put miso in a bowl and blend in egg yolk, sake, mirin and sugar.
  4. Place bowl over a saucepan of simmering water.
  5. Gradually add dashi and stir until sauce becomes thick but not too hard, then add lime juice.
  6. Remove from heat immediately and cool to room temperature (it will keep well in the refrigerator, if wished).
  7. Preheat grill.
  8. Unwrap tofu cakes and cut into 5 x 2 x 1 cm (2 x 3/4 x 1/2 in) slices.
  9. Skewer each slice lengthways with 2 bamboo skewers.
  10. Grill them under high heat for a few minutes on each side until lightly browned and heated through.
  11. Remove from heat and, using a butter knife, thickly spread one side with miso sauce.
  12. Sprinkle with toasted sesame seeds.
  13. Grill miso covered side for 1-2 minutes.
  14. Serve hot on skewers on a bed of bamboo leaves.

Serves 4 as a starter.
