Pork With Citrus Soy Sauce Recipes

Ingredients :

Citrus Soy Sauce :

pork loin or gammon

spring onions, cut in half

piece fresh root ginger, peeled and cut into 3-4 pieces

 

lime juice

rice vinegar

soy sauce

mirin

spring onions, finely chopped

fresh root ginger, peeled, finely chopped

Method :
  1. Put pork, spring onions, ginger and a pinch of salt in a large pot and cover with water.

  2. Bring to the boil, cover pot and simmer gently for 2 hours.

  3. Drain meat, put it in a bowl of ice cold water and refrigerate until chilled.

  4. Remove pork form water, pat dry and then slice it crossways against the grain as thinly as possible.

  5. Arrange slices, fanning them out around the edge of a large serving platter.

  6. To make citrus soy sauce, mix together lemon and lime juice, rice vinegar, soy sauce, mirin, spring onions and ginger, and stir well.

  7. Transfer it to a serving bowl or a ramekin and place in the centre or the pork circle.

  8. Serve cold.
