Shrimp and Soba Noodle Salad Recipes

Ingredients :

1 tbsp finely chopped fresh ginger

1 clove garlic, finely chopped

80ml rice wine vinegar

1 tsp sugar

2 tsp sesame oil

80ml Japanese or light soy sauce

250g dried soba noodles

400g cooked, peeled and deveined medium Shrimps

1 small red capsicum, julienned

4 spring onions, sliced diagonally

1 tbsp sesame seeds, toasted

Method :
  1. Place the ginger, garlic, vinegar, sugar, sesame oil, soy sauce and 1/4 tsp freshly ground black pepper and 1/2 tsp salt in a small bowl and combine well.
  2. Bring a large saucepan of lightly salted water to the boil.
  3. Add the noodles and cook for 4-5 minutes, or until just tender.
  4. Rinse under cold water, drain and place in a large bowl with the Shrimps, capsicum, spring onion and dressing.
  5. Toss to combine and season to taste with salt and freshly ground black pepper.
  6. Evenly divide the salad among four serving bowls and sprinkle with the toasted sesame seeds.

Ready to eat in 20 minutes

Serves 4 - 6
