Put beef in the freezer for about 1
hour to part harden, then slice very thinly against the grain into
bite sized pieces.

Quarter each potato and boil until
tender but still slightly hard in the center.

Drain and set aside.

Cut onions into thin half moon
slices.

In a frying pan or a shallow
saucepan, heat a little vegetable oil and stir fry beef slices over
medium heat.

When beef begins to change color,
add potatoes and continue to stir.

Add sugar and soy sauce to the pan
and lightly fold in.

Pour in enough dashi or water to
just cover ingredients and bring to the boil.

Skim the surface to remove any fat
and lower the heat.

Place a small wooden lid or a plate
touching the ingredients inside the pan and simmer over medium heat
for 10 minutes.

Add onion slices and continue to
cook until all ingredients are tender and have absorbed the flavour.

Serve in small individual bowls
garnished with mange tout.
