Caribbean Fruit Kebabs Recipes

Ingredients :

1 pineapple

1 ripe mango

125g strawberries

50g raspberries

Sauce:

175g plain dark chocolate, chopped

175g milk chocolate, chopped

150ml double cream

2 tbsp dark rum

Method :
  1. First make the sauce.
  2. Put the dark and milk chocolate into a heatproof bowl set over a pan of gently simmering water.
  3. Heat until melted, stir occasionally.
  4. Stir the cream into the chocolate mixture, then add the rum.
  5. Prepare the fruit: peel, core and chop the pineapple.
  6. Skin, stone and chop the mango.
  7. Hull and quarter the strawberries.
  8. Thread the fruits on to wooden skewers and serve with the chocolate sauce.
