Fish and Pineapple Kebabs Recipes

redfish fillets, cut into cubes

can pineapple pieces, drained

red capsicum, seeded, cut into squares

green capsicum, seeded, cut into squares

wooden skewers, soaked in water

chopped mint

honey

oil

lemon juice

Method :
  1. Thread fish, pineapple and capsicum alternately onto skewers.
  2. Brush with combined mint, honey, oil and lemon juice.
  3. Barbecue until fish is cooked on both sides, basting frequently with marinade.

Makes 8 kebabs
