Gem Fish Kebabs with Apple Marinade Recipes

Ingredients :

gemfish fillets, skinned and cubed

apple juice

ground cumin

grated fresh ginger

cloves garlic, crushed

red chili, chopped

cucumber

can sliced pineapple, drained

bamboo skewers, soaked in water

Method :
  1. Combine gemfish with apple juice, cumin, ginger, garlic and chili, cover, refrigerate at least 1 hour, drain, reserve marinade.
  2. Cut cucumbers in half lengthwise, scoop out seeds, cut into chunks the same size as fish.
  3. Cut pineapple slices into 3.
  4. Thread gem fish onto skewers alternately with cucumber and pineapple.
  5. Barbecue over medium heat until gem fish is tender, brushing occasionally with marinade.
