Prawn Kebabs with Butter Sauce Recipes

Ingredients :

green king prawns, shelled, deveined, tails intact

wooden skewers, soaked in water

large mango, chopped into large cubes

egg yolks

lemon juice

butter, melted and bubbling

Method :
  1. Thread 2 prawns onto each skewer, divided by a piece of mango.
  2. Barbecue on each side until prawns change color.
  3. In a processor or blender, process egg yolks and lemon juice, pour bubbling butter into egg mixture while processor is running.
  4. Process 1 minute or until sauce has thickened.
  5. Serve with kebabs.

Makes 6 kebabs
