Baked Pumpkin Cups Recipes

Ingredients :

1/4 pumpkin

150g dark pork floss

several peas

75g almond flakes

1 tsp butter

Method :

Scoop out seeds from pumpkin then put it (with skin) into microwave oven and cook or 3 minutes. Use a tablespoon to mash the pulp, add dry pork floss and butter. Put the mixture into aluminium foil cups, place peas and almond flakes on top. Heat oven to 200C. Bake mixture for 15-20 minutes. Serve immediately.

Serves 2 - 4
