Gamjatang (Pork and Potato Stew) Recipes

Ingredients :

3 pounds pork chain bone with meat (or neck bone), about 4-inch pieces

1/2 cup fresh ginger, peeled and rinsed

4 potatoes, peeled

2 scallions, roots trimmed and then chopped into 1-inch slices

6 liters water

 

four bowls of cooked rice

 

Sauce -

2 tbsp soy sauce

1/2 tsp salt

1 tbsp red pepper powder

1 tbsp Korean soybean paste (doenjang)

1 tsp Korean hot pepper paste (gochujang)

1 tbsp minced garlic

pinch of black pepper

Method :

Put the pork bones in cold water for 1 hour. Keep changing the water until there is no more blood and the water is clean.

Mix all the sauce ingredients in a bowl before adding to the stew.

Put water, ginger, and the prepared pork bones in a large pot. Start to boil over high heat for about 30 minutes. Add sauce and stir. Reduce heat to medium and let simmer for 1 hour. Add the potatoes and let simmer for another 30 minutes. Take out the ginger and discard. Boil another 5 minutes (at this point, the meat should be soft enough to easily come off the bone). Serve the stew in a large soup bowl and lay the scallions on top.
