Method :
Wipe both sides of the kelp with a clean wet cloth and let it soak in the
water for about 30 minutes before serving.
Heat a heavy pot until hot and add anchovies. Stir over high heat for
about 20 seconds and then add the kelp and the water that the kelp was
soaked in. Once the water starts to boil, reduce the heat to medium and
skim any foam that forms on top. Let simmer for about 10 minutes and
then use a fine mesh strainer to remove all of the anchovies and the
kelp from the broth. The pot should remain uncovered during the entire
process.
Tips for
anchovies - There are various sizes of anchovies available. For this
broth, it is better to use the large ones (bigger than 1 inch). Remove
the head, split the anchovy down the middle, and remove the guts; this
should keep the anchovies from giving off any unpleasant odors.
