Kimchi Jjigae (Kimchi Stew) Recipes

Ingredients :

1 pound kimchi, cut crosswise into 1-inch pieces

1/2 cup kimchi juice (the liquid in the kimchi container)

3 cups water

1 piece (3 ounces) fresh pork belly (unsmoked bacon), cut into thin slices

2 tsp minced garlic

1 scallion, cut into 1-inch pieces

1/2 pack (5 ounces) of firm tofu, drained and cut into small rectangles

Method :

Put kimchi, kimchi juice, pork, garlic and water in a stone pot (or heavy metal pot) and boil for about 20 minutes over high heat. When the kimchi becomes soft and the pork is fully cooked, add the tofu and boil one more minute. Add the scallions before turning off the heat. Serve hot.

Serves 2

The key to this dish is to use aged kimchi, since its taste will mature over time. You may need to keep a glass of water handy for this dish - it's delicious, but very, very spicy.
