Method :
Mix together the orange rind and
juice, mint, garlic, mustard, coriander, cayenne, salt and pepper. Grease four 8 inch (20 cm) squares of
foil and place a piece of lamb in the centre of each. Place 2 apple rings on each lamb steak
and fill the centre with currants. Draw up the sides of the foil, pour on
the orange mixture and seal up the parcels securely. Place them on a baking sheet and cook
in the oven at 375oF (190oC), Gas 5 for 45
minutes. Increase the heat to 425oF
(220oC), Gas 7 and open the foil. Cook for a further 15 minutes.
Serves 4
Note : Cook large jacket potatoes
in the oven at the same time.
