1 lb white fish fillets, finely chopped
2 tbsp fish sauce
1/2 tsp salt
4 fresh chili peppers, finely sliced
1 large shallot, finely minced
2 stalks of lemongrass, finely sliced
6 garlic cloves, pressed
1/2 cup grated coconut
2 scallions, chopped
2 tbsp Chinese parsley, minced
1 egg white, beaten
2 tbsp rice flour
oil for frying |
Method :
Toss minced
fish with fish sauce and salt. Place in a mixing bowl. Pound or puree in a
food processor the chili peppers, shallot and lemongrass. Mix the paste
with the pressed garlic, coconut, scallions, and parsley. Add the beaten
egg white and the flour to the fish mixture and thoroughly blend in the
paste ingredients. Form into one-inch balls, and fry in hot oil until
golden brown.
Serves 3-4
