Lao Fish Soup with Lime Recipes

Ingredients :

3 cup flavorful fish stock or clam juice diluted with water

1 lb can Italian tomatoes, pureed

1 tsp salt (optional)

1 whole inner stalk of lemongrass, lightly pounded

1 lb boned trout, sliced into 2-inch strips

1 tiny, fresh green chili, seeded and sliced (wear rubber gloves)

3 tbsp fish sauce

8-12 button mushrooms

2 tbsp fresh lime juice

green part of 6 scallions, thinly sliced

1-2 tbsp fresh, whole coriander leaves

Method :

Pour fish stock of equivalent, tomatoes, optional salt, and whole lemongrass stalk into a large saucepan. Bring to the boil and simmer, uncovered, for 15 minutes. Remove and discard lemongrass. Add fish, green chili, fish sauce and button mushrooms. Bring to the boil and simmer, over low heat, for 6-7 minutes, depending on thickness of fish. Add lime juice and remove from heat. Serve garnished with sliced scallions and coriander leaves.
