Steamed Chicken Stuffed with Peanuts Recipes

Ingredients :

juice of one lime

2 dried red chili peppers

seeds from 6 cardamom pods

1 tsp fennel seeds

1/2 tsp salt

3-4 lb roasting chicken, fat removed

1 tbsp peanut oil

1 medium onion, chopped

4-5 oz loose pork sausage

1 cup toasted peanuts, chopped

3-4 dried red chilies, toasted and ground

3 tbsp fresh lime juice

1 tbsp minced fresh mint leaves

6 mint leaves, for garnish

1/2 tsp soy sauce

Method :

In a spice grinder or mortar and pestle, grind the dried chili pepper, cardamom seeds, fennel seeds, and salt. Set aside spice mixture. Heat peanut oil in medium-sized skillet and stir-fry onions until lightly browned. Add crumbled pork sausage and stir until no longer pink. Remove from heat and stir in peanuts, toasted ground chili peppers, one tablespoon of lime juice, and chopped mint. Place stuffing in cavity of bird and skewer closed. Place chicken in a shallow heatproof dish and pour remaining lime juice over it. Rub reserved spice mixture all over chicken. Place dish in a large steamer over rapidly boiling water. Cover and steam chicken until juices run clear when prickled with a fork - about 50 minutes - replenishing water as needed. Remove chicken to a serving platter and keep warm. Pour juices into a sauce-boat, skim off fat, and season juices with soy sauce. Serve chicken, garnished with mint leaves, and pass the pan juices separately.
