Steamed Shrimp in Banana Leaf Packets Recipes

Ingredients :

banana leaves or aluminum foil for wrapping

2 lb shrimp, peeled and deveined

1 tsp salt

2 small red chili peppers, minced

3 shallots, finely sliced

1 tsp very finely shredded ginger

2 inner stalks of lemongrass, finely sliced

2 tbsp fish sauce

8 basil leaves

2 tbsp minced coriander

lime wedges

Method :

Banana leaves should be soaked in boiling water to soften them. Drain and clean with a damp cloth. Cut into 10-inch squares and patch, where necessary, with extra leaves.

Toss the shrimp with the salt and set aside. Pound, or process, the chili peppers, shallots, ginger, and lemongrass to a paste. Mix in the fish sauce and lime. Add to the shrimp and toss well to coat shrimp with paste. Divide in four and place on four banana leaves. More than one leaf will be needed for each packet as they frequently need to be overlapped where they are torn. Wrap securely and fasten with a piece of bamboo. Place in a steamer and when the water boils, steam packets for 20 minutes. Put the packets on four warmed plates. Serve with tiny bowls of fresh herbs for garnishing and lime wedges.
