Beef Satay and Pressed Rice with Peanut Sauce Recipes

Ingredients :

400g beef fillet (cut into cubes)

20-30 satay sticks

50ml cooking oil (for basting)

Marinating Ingredients:

a) 1 stalk lemon grass

b) 3 cloves garlic

c) 1 large onion

d) 3cm ginger

a+b+c+d = blended into a paste

 

salt and sugar to taste

2 tsp coriander powder

1.5 tsp cummin powder

1.5 tsp fennel powder

1 tsp turmeric powder

 

Pressed Rice Ingredients:

150g rice

500-600ml water

1 pandan leaf

1 tsp salt

 

Peanut Sauce Ingredients:

200g salted, roasted peanuts (ground)

3 tbsp chili paste

2 tsp ground, fried, grated coconut (kerisik)

1 vegetable stock cube

50ml tamarind juice

100ml water

50g palm sugar

salt to taste

oil for sauteing

a) 3 cloves garlic

b) 3 shallots

c) 4cm ginger

d) 1 stalk lemon grass

a+b+c+d = finely blended

Method :

To prepare satay: Marinate beef cubes with marinating ingredients for 3 hours. Skewer 4-5 marinated beef onto satay sticks. Grill skewered beef and baste with oil until cooked.

To prepare pressed rice: Cook rice in water, pandan leaf and salt. Keep stirring the rice when it starts to boil until rice forms a thick paste. Pour rice into a swiss roll pan and press down. Leave to cool. Cut rice into cubes.

To prepare sauce: Saute blended ingredients and add chili paste, kerisik, stock cube, tamarind juice, water, palm sugar and salt to taste. Let it simmer and then add peanuts. Stir to combine.

Serve satay with rice cubes and sauce.
