Chili Peanuts with Anchovies Recipes

Ingredients :

4 red chilies

1 shallot

1 tbsp oil

1/2 tsp salt

1 tbsp sugar

100g (3.5 oz) roasted peanuts with skin

30g (1 oz) anchovies (ikan bilis), heads and intestinal tract removed and fried till crisp

Method :

Blend the chilies and shallot together. Heat the oil and gently fry the blended mixture with the salt and sugar for 1 minute. Add the peanuts and anchovies. Stir fry for 3 minutes and remove from heat. Keep in a bottle in the fridge up to 3 weeks.
