Chili Peanuts with Anchovies Recipes
4 red chilies
1 tbsp oil
1/2 tsp salt
1 tbsp sugar
100g (3.5 oz) roasted peanuts with skin
30g (1 oz) anchovies (ikan bilis),
heads and intestinal tract removed and fried till crisp
Blend the chilies and shallot together.
Heat the oil and gently fry the blended mixture with the salt and sugar
for 1 minute. Add the peanuts and anchovies. Stir fry for 3 minutes and
remove from heat. Keep in a bottle in the fridge up to 3 weeks.
