Method :
Lightly fry
spring onions and chilies in 2 tbsp oil. Chop bacon or ham and prawns
and add to the pan. Stir-fry for 2 minutes. Pour in rice, mixing well
with meat. Add more oil if necessary. Sprinkle on soya sauce and salt to
taste. Stir-fry rice on moderate heat until rice changes color and is
slightly crisp. Remove and keep warm.
Wipe out pan
and pour in beaten egg, swirling pan to make a very thin omelette. Cook
until set, then remove and shred. Add celery (if used), and a little
more oil and stir-fry for 2 minutes. Add chopped spring onions and green
peas and heat through, then return rice to the pan and stir in chili
powder. Add salt and more soya sauce if necessary. Stir on high heat for
1 minute, then spoon into a serving dish and garnish with shredded egg.
