Method :
Clean
chicken, chop into fairly large pieces and wipe dry. Sprinkle generously
with salt. Mix all remaining seasonings into a paste and rub well into the
chicken pieces. Allow to stand for 45 minutes to absorb the flavors.
Heat
oil in a deep pan and when almost at smoking point carefully lower the
chicken pieces into the oil. Turn heat down slightly. Fry chicken until
cooked through and well crisped on the surface. Remove from oil and drain
thoroughly on absorbent paper.
Serve
on a bed of lettuce and garnish with freshly fried kerupuk or potato
crisps.
