1 whole red snapper, weighing about 2 lb
1 tbsp sea salt
3 tbsp lime juice
1/3 cup soy sauce
2 tbsp brown sugar
1 thinly sliced hot red chili pepper
2 grindings of black pepper
1 tbsp peanut oil for grill
1 sliced scallion for garnish
cilantro leaves for garnish |
Method :
Mix together 2 tbsp of lime juice with
the sea salt, and run all over the fish. Allow to marinate for 20
minutes. Wash fish, and pat dry with paper towels. In a small bowl,
mix together the remaining lime juice, soy sauce, sugar, chili
pepper and black pepper. Preheat broiler, brush grill with oil, and
broil fish for 10 minutes per inch of thickness, turning once. Baste
fish two to three times per side with the soy mixture. Remove fish
to a warm platter to serve, and garnish with scallions and cilantro
leaves. Pass remaining soy mixture separately.
