Method :
Cut the
chicken wings in two (discard the tips if preferred). Combine the
zests, juices, oil, sambal oelek, garlic, coriander and salt in a
shallow, non-metal dish. Add the chicken pieces and stir well to
combine. Cover and refrigerate overnight. Preheat the oven to
moderately hot 210C and brush an oven tray lightly with oil. Place
the chicken pieces on the tray and cook for 20 minutes or until
cooked through. Remove the chicken from the oven and place under a
hot grill for 3-5 minutes or until crisp and golden, turning
occasionally. Delicious served with sweet chili sauce.
