vegetables as long beans, green beans, green peas, cabbage, Chinese
cabbage, spinach. Chop all vegetables, wash and drain well. Parboil peas
and fry gently in oil, then add shallots or onions. Stir-fry for 2
minutes before adding chilies, crushed black beans and sugar. Pour on
water, soya sauce and add the vegetables. Stir-fry for 1 minute, then
cover pan and simmer for 4-5 minutes, depending on type of vegetables
the vegetables should be lightly cooked but retaining crispness. Add
salt to taste. For extra flavor include chopped shrimp or chicken meat.
