Method :
Clean, peel, and devein prawns, and remove heads. Wash and dry well.
Season with salt and roll in shredded ginger, coating well. Allow to stand
for 7 minutes to absorb the ginger flavor.
Heat
oil in a deep pan and lower prawns in on a slotted spoon. Deep fry until
cooked through, then remove and drain. Do not overcook or prawns will
become tough and dry.
Pour
out all but 1 tbsp oil and add remaining ingredients to the pan, including
any leftover ginger. Boil for 30 seconds, then return prawns and sauce for
another 30 seconds.
Arrange prawns on a serving plate and garnish with pineapple chunks.
