Prawns Robed In Spices Recipes

Ingredients :

candlenuts or cashew nuts

lime juice

large shallots, chopped

cloves garlic, crushed

piece galangal, chopped

piece fresh root ginger, chopped

stalk lemon grass, chopped

ground turmeric

vegetable oil

raw unpeeled medium prawns, peeled and deveined

Method :
  1. Put nuts in a blender and grind to a powder.
  2. Transfer to a small bowl.
  3. Stir in lime juice and 1 tablespoon water.
  4. Set aside.
  5. Put shallots, garlic, galangal, ginger, lemon grass and turmeric in blender.
  6. Add 2-3 tablespoons water and mix to a paste.
  7. Heat oil in a wok or large non stick frying pan over medium heat.
  8. Add spice paste and cook, stirring for about 5 minutes until reduced and reddish brown in color.
  9. Add prawns and nut mixture.
  10. Increase heat to high and fry, stirring for 2-3 minutes until prawns are cooked and spice mixture clings to them.
  11. Using a slotted spoon transfer to a warm plate, leaving all oil behind.

Serves 3-4
