Method :
Trim
ribs and chop into 4cm (1.5 inch) pieces. Place in a large bowl. Mix
together all remaining ingredients, except oil. Pour over ribs and
marinate for 60-90 minutes.
Drain
pork, reserving marinade. Heat oil in a wok and stir-fry for 3 minutes,
then pour in marinade and cover pan. Simmer on low heat for 20 minutes,
adding a little more water or stock if necessary. Serve as a main course
or as part of a 'Dim Sum' meal.
Instead of frying, the ribs and marinade may be placed in a shallow dish
inside a steamer and steamed over high heat for 25-30 minutes.
