Stewed Pork Ribs (Pai Gwat) Recipe

Ingredients :

375g (3/4 lb) meaty pork ribs

2 tbsp dark soya (soy) sauce

1 tbsp light soya (soy) sauce

1/2 cup light stock

2-3 fresh red chilies, sliced

5cm (2 inch) piece fresh ginger, shredded

1 tbsp sugar

2 tbsp oil

Method :

Trim ribs and chop into 4cm (1.5 inch) pieces. Place in a large bowl. Mix together all remaining ingredients, except oil. Pour over ribs and marinate for 60-90 minutes.

Drain pork, reserving marinade. Heat oil in a wok and stir-fry for 3 minutes, then pour in marinade and cover pan. Simmer on low heat for 20 minutes, adding a little more water or stock if necessary. Serve as a main course or as part of a 'Dim Sum' meal.

Instead of frying, the ribs and marinade may be placed in a shallow dish inside a steamer and steamed over high heat for 25-30 minutes.
