Stuffed Cuttlefish in Turmeric Gravy Recipes

Ingredients :

2 cuttlefish (cleaned)

1 red chili (chopped)

200g glutinous rice (washed and drained)

200ml coconut milk

a pinch of salt

1 stalk parsley (chopped)

toothpicks (to secure cuttlefish)

Ingredients for Gravy:

200ml coconut milk

1 tsp turmeric powder

1 turmeric leaf (knotted)

2 shallots, minced

2 cloves garlic, minced

1/2 cube of seafood stock

30ml oil

Method :

Clean cuttlefish and push the head and tentacles back inside. Cook glutinous rice in coconut milk and salt until rice is soft. Fluff and mix with parsley and red chili. Stuff cuttlefish with glutinous rice and secure the ends with toothpicks. Set aside.

To prepare gravy: Heat oil and saute minced ingredients. Add turmeric powder and turmeric leaf. Stir-fry until fragrant. Add coconut milk and stock. Add cuttlefish and leave to simmer for 6-8 minutes. Serve on bed of greens.

Serves 4.
