Method :
Cut beef into
small pieces. Chop or mince dried chilies, shallots and ginger and grind
to a paste with candlenuts, dried shrimp paste and turmeric.
Heat oil in a
large pan and fry seasonings for 4 minutes, stirring constantly. Put in
beef and turn several times to thoroughly coat meat pieces with the
seasonings. Fry until well browned. Soak tamarind in water. Squeeze and
strain into meat. Bring to the boil, then add sugar and salt to taste.
Turn heat down and simmer till beef is very tender and gravy slightly
reduced.
Remove beef and
arrange on a serving dish. Pour on a little of the sauce. Garnish with
sliced red and green chilies. Serve the meat without sauce if it is to
accompany other sauced dishes.
