Chicken in Salad Dressing Recipes

Ingredients :

6 chicken wings, middle section

1 sheet slivery Vietnamese spring roll wrapping

2 tbsp beaten egg

1 tbsp cornflour

3 tbsp mayonnaise

Marinade

1/2 tsp sugar

1/2 tsp cornflour

1 tsp light soy sauce

1 tsp dark soy sauce

1 tsp ginger wine

Sauce

2 tbsp water

1 tbsp ketchup

1 tbsp dark vinegar

1 tbsp sugar

Method :

Bone chicken wings. Add marinade. Mix well and leave them for 10 minutes. Cut the spring roll wrapping into wedges. Deep fry until crisp. Leave aside for later use. Add beaten egg to the chicken wings and mix well. Coat with cornflour. Deep fry in medium hot oil until done. Heat 1 tbsp of oil in wok. Boil the sauce ingredients. Add chicken wings and toss well. Lastly, stir in mayonnaise and mix well. Arrange the wings on top of a bed of deep fried spring roll wrapping crispy sheets.

Mayonnaise makes the sweet and sour sauce creamier. Spring roll wrappings are available at Vietnamese groceries. Deep fried them in medium hot oil until crispy and lightly golden.
