Pan Seared "Vanilla Flavored" Duck Liver Recipes

Ingredients :

65 gm duck liver

1.5 gm vanilla bean

40 gm white onion

2.5 cl port wine "ruby"

1 cl Grenadine syrup

40 gm green apple

5 gm blueberry

5 gm black currant

5 gm red currant

5 gm strawberry

5 gm gooseberry

2.5 cl miso sauce

4 gm black truffle

2 cl olive oil

5 gm fresh basil

6 gm fresh mint

Method :

Clean all the fruits and make a nice selection for 1 portion. Slice the duck liver and season them. Place a pan on the fire and make it very hot! Meanwhile place a pot with miso soup on the fire and add in a vanilla stick. Peel some onions and slice them fine, take a pot and sauté the onions. A bit later on, add in the grenadine and some port wine, reduce heat until you get a nice, soft, red color.

Peel an apple and remove the core. Slice apple finely and sauté in a pan with some butter until golden brown, add in some brown sugar (to make it a bit sweet). Place your mixed fruits in a plate together with the red onion slices and then sautéed apple, pan sear your duck liver and place it on top of the apple and onion. Then take the miso juice and pour it on the seared duck liver. For decoration add some fresh basil and mint!

Accompanied with onion confit & caramelized green apple, fresh mixed berries dressed with miso sauce.
