Moroccan Fish in Golden Marinade Recipes

Ingredients :

6-8 sea bream fillets, scaled

3 tbsp seasoned p lain white flour

3 tbsp virgin olive oil

chopped coriander or parsley, to garnish

Marinade:

3 tbsp virgin olive oil

2 red onions, thinly sliced

1.5 tsp cumin seeds, lightly crushed

1/2 tsp dried red chili flakes

2 red peppers, cored, deseeded and sliced

large pinch of saffron threads, crushed and soaked in 3 tbsp water

finely shredded rind and juice of 1 orange

2-3 tbsp lemon juice

caster sugar, to taste

salt and pepper

Method :

First make the marinade. Heat the oil in a frying pan. Add the onions and fry over a low heat for 2 minutes. Add the cumin seeds and chili flakes and stir for about 45 seconds. Add the red peppers and fry, stirring occasionally, until soft, then add the saffron and its liquid, orange rind and juice and lemon juice. Allow to bubble for a few minutes, then add sugar, salt and pepper to taste. Leave to cool.

Coat the fish in the seasoned flour. Heat the oil in a large frying pan. Add the fish and fry for about 2-3 minutes on each side until browned and just cooked through.

Using a fish slice, transfer the fish to a shallow non-metallic dish. Leave to cool, then pour over the cooled marinade. Cover the dish, place in the refrigerator and leave the fish for 4-12 hours, turning it carefully 2-3 times during marinating. Return the fish to room temperature about 30 minutes before serving, garnished with coriander or parsley.
