Moroccan Hot Sauce (Chermoula) Recipes

Ingredients :

1/4 - 1/2 tsp cayenne pepper

1/2 tsp salt

3 cloves garlic, peeled and chopped

1.5 tsp sweet Hungarian paprika

1/2 - 1 tsp ground cumin

1/2 cup chopped fresh cilantro (optional)

1/2 cup chopped fresh parsley

juice of 1 lemon

2 tbsp red wine vinegar

2.5 tbsp olive oil

Method :

Place the cayenne, salt, paprika, cumin, cilantro, and parsley in a food processor or blender and pulse until smooth. With the motor running, slowly add the lemon juice and vinegar and then the oil. Taste for seasoning and adjust, adding more cumin and/ or cayenne to taste.

Makes about 1/2 cup

A musty, exotic sauce that enlivens the flavor of any roasted food - particularly poultry, lamb and beef - this is also wonderful drizzled over roasted vegetables, barbecued foods, or as a marinade for seafood or lamb.
