Moroccan Stew Recipes

Ingredients :

boned should or leg of lamb




ground cinnamon

garlic cloves, crushed

onions, finely chopped

dried apricots

cumin seeds

clear honey

orange juice

flaked almonds


Method :
  1. Trim the meat of fat and cut into large pieces.
  2. Heat the oil in a saucepan and brown the onions and meat.
  3. Stir in the spices and garlic and mix well.
  4. Add enough water to cover the meat.
  5. Simmer, with the lid on, for 11/2 hours.
  6. Meanwhile, soak the apricots and cumin in the honey and orange juice.
  7. When the meat is tender, add the fruit and cook for another 15 minutes.
  8. At the same time, fry the almonds in oil to sprinkle on top of the casserole when serving.
