Myanmar Fish Curry Recipes

Ingredients :

2 lb firm, white fish fillets

1 tbsp fish sauce

1/2 tsp turmeric

2/3 cup oil

1/4 cup sliced onion

2 garlic cloves, chopped

1 quarter-sized slice of ginger, shredded

1 tiny red chili pepper, seeded and sliced

2 ripe tomatoes, seeded and chopped

2 scallions, thinly sliced, for garnish

Method :

Rub fish fillets with fish sauce and turmeric. Cut fillets into 2-inch pieces. In a mini food processor, or using a mortar and pestle, make a paste of the onion, ginger, and chili pepper. Heat oil, over low heat, in a large skillet, stir-fry paste until fragrant - 1-2 minutes. Add fish, turning pieces to coat with paste, cover, and cook over high heat for 2 minutes. Pour into skillet 1/3 cup water, stirring gently, then add chopped tomato and simmer, covered, for about 6 minutes. Serve garnished with scallions.
