Noodles With Peanut Sauce Recipes

Ingredients :

225 g

fresh thin egg noodles

sesame oil

unsalted roast peanuts

clove garlic, crushed

light soy sauce

Chinese black vinegar

light brown sugar

groundnut (peanut) oil

few drops hot chili oil

white part spring onion, thinly sliced to garnish

fresh red chili, very thinly sliced, to garnish

Method :
  1. Bring a large saucepan of water to the boil.

  2. Add noodles, return to boil, stir, then cover pan and boil until just tender.

  3. Drain well and tip into a serving bowl.

  4. Toss with 1 tablespoon sesame oil.

  5. Set aside.

  6. In a blender or a spice grinder, or using a pestle and mortar, crush 1 tablespoon peanuts.

  7. Set aside.

  8. Put remaining peanuts and sesame oil, garlic, soy sauce, vinegar, sugar and groundnut oil in a blender.

  9. Add 55 ml water.

  10. Mix to a smooth paste.

  11. Add chili oil to taste.

  12. To serve, pour peanut sauce over noodles.

  13. Toss to mix.

  14. Sprinkle crushed peanuts on top, and garnish with spring onion and chili slices.

Serves 3-4 as a side dish.
