Veal Balls With Noodles Recipes

Ingredients :

Garnish :

minced stewing vela

large onion, finely chopped

clove garlic, crushed

whole meal bread crumbs

dill seed

chopped parsley

whole meal flour

low fat plain yoghurt

mushrooms, sliced

whole meal, noodles

salt and ground black pepper

 

chopped mint

Method :
  1. Fry the veal in a non stick pan over low heat, stirring, until the fat begins to run.

  2. Spoon off the excess fat.

  3. Add the onion and garlic and fry over moderate heat, stirring occasionally, for 4-5 minutes, until the onions are transparent.

  4. Using a slotted spoon, transfer to a bowl.

  5. Stir in the bread crumbs, dill seed and parsley and season with salt and pepper.

  6. Mash well with a fork.

  7. Sprinkle some flour on your hands and shape the mixture into 12 balls.

  8. Roll in flour to coat thoroughly.

  9. Heat the pan over moderate heat and fry the veal balls in the remaining fat, turning often, until sealed all over.

  10. Pour on the yoghurt, cover and simmer for 20 minutes.

  11. Season with salt and pepper, add the sliced mushrooms and simmer for 5 minutes.

  12. Meanwhile, cook the noodles in a large pan of boiling, salted water for 12-13 minutes or according to the directions on the packet, until just tender.

  13. Drain thoroughly.

  14. Transfer the vela and sauce to a heated serving dish, arrange the noodles around the outside and sprinkle with the mint.

Serves 4
