Kuih Kosui Recipes

Ingredients :

Ingredients A:

30g rice flour

30g tapioca flour

100ml water

1/4 tsp alkaline water (air abu)

1/8 tsp salt

Ingredients B:

30g granulated sugar

45g gula melaka

3 pandan leaves

200ml water

100g grated coconut, white part only mixed with 1/4 tsp salt

Method :

Mix ingredients A well. Cook Ingredients B till sugar dissolves to make syrup. Strain. Pour hot syrup into Ingredients A. Stir well and strain again. Heat a 17cm round tray in the steamer till hot. Pour in the batter and stir till it thickens lightly. Cover and steam for 10 minutes or till cooked. Wipe excess steam from lid. Remove and leave to cool before cutting. Roll in grated coconut before serving.

Makes 10 pieces.

Note : If batter becomes lumpy while stirring just break them up into small bits. Cover and steam.
