Kuih Lapis Recipes

Ingredients :

75g rice flour

50g starch flour

Ingredients A:

425ml santan (coconut milk) from 1.5 coconuts

100g granulated sugar

3 pandan leaves (screwpine leaf), knotted

pinch of salt

a few drops red coloring

Method :

Mix rice flour and starch flour together. Simmer Ingredients A till sugar has dissolved. Cool. Mix the flour mixture with santan-sugar mixture. Strain and divide into two parts. Color one part pink and leave the other white. Heat a 15cm round tray. Stir mixture well before pouring in a thin white layer on to the tray. Steam till cooked (1-2 minutes).

Scratch lightly. Pour the pink batter on top and steam again. Wipe excess steam from lid. Repeat process till the last layer. Add some red coloring to it to make it bright and attractive. Steam for a few minutes. When cooked, leave to cool before cutting.

Makes 10 pieces.
