Ingredients :

Ingredients A (bottom layer):

60g granulated sugar

250ml santan from 50g coconut

50ml thick pandan juice

40g rice flour

20g cornflour

1/4 tsp alkaline water (air abu)

drops of green coloring if desired

Ingredients B (top layer):

30g rice flour

3/4 tbsp cornflour

175ml santan from 100g coconut

1/4 tsp salt

Method :

Mix ingredients A till sugar dissolves. Add green coloring. Strain. Heat a 17cm round tray in the steamer for 5 minutes. Pour the batter in and stir till very hot. Cover and steam for 10-15 minutes. Wipe steam from under lid from time to time.

Mix ingredients B well and strain. When bottom layer is cooked scratch all over the surface lightly. Pour the top layer slowly and steam for 10-15 minutes or till cooked. Remove and leave to cool before cutting.

Makes 12 pieces.
