Sour Fish Curry Cooking Recipes

Ingredients :

red snapper, cut into thin slices

fresh red chilies, sliced

stalks lemon grass, finely sliced

bunga kantan (ginger flower) - sliced finely

dried chilies

piece shrimp paste, mixed with 2 tsp water

shallots, sliced

tamarind juice, extracted from walnut sized ball of tamarind


salt and sugar to taste

Method :
  1. Heat oil in a pan and fry the sliced shallots until transparent and fragrant.
  2. Add 3 cups of water and bring to the boil.
  3. Add tamarind juice, salt and sugar.
  4. Continue boiling.
  5. Add sliced chilies, lemon grass and shrimp paste.
  6. When the curry begins to boil again, add the fish slices and sliced bunga kantan.
  7. Simmer for 5 minutes and remove from heat.

Serves 4 - 6
