Avocado Creamed Pasta With Pine Nuts Recipes

Ingredients :

1 packet small pasta (such as baby shells recommended for soup)

boiling salted water

1 carton (142 ml) soured cream

50 g pine nuts, lightly toasted

1 medium sized ripe avocado

salt and pepper to taste

Method :
  1. Cook pasta in the boiling salted water as directed on the packet; it should take 10-12 minutes.
  2. Drain and return to saucepan.
  3. Stand over low heat.
  4. Using a large spoon, mix in the soured cream and pine nuts, tossing mixture over and over.
  5. Peel avocado as you would peel a pear, starting from the narrow end.
  6. Cut flesh into small cubes and gently fold into pasta mixture.
  7. Adjust seasoning to taste and transfer to a warm serving dish.
  8. Hand grated Parmesan cheese separately for sprinkling over top of each portion.

A rich but easily made vegetarian type main course, a joy with a topping of cheese and crunchy green salad to go with it.
