Chicken, Chili and Mushroom Pasta Recipes

onion, chopped

green capsicum, seeded and chopped

clove garlic, crushed

chicken mince

fresh button mushrooms, quartered

can tomatoes, chopped

red wine

chili sauce

chopped chili

dried thyme

oregano

pasta of choice

boiling water

chopped parsley

grated Parmesan cheese

salt and pepper to taste

Method :
  1. Place butter, oil, onion, capsicum and garlic in a microwave-safe casserole dish.
  2. Cover with lid or plastic wrap.
  3. Cook on high (100%) for 2 minutes, stirring once.
  4. Add mince, breaking up with a spoon.
  5. Cover, cook on high (100%) for 4 minutes, stirring twice.
  6. Blend in mushrooms, tomatoes, wine, chili sauce, chopped chili, thyme, oregano and salt and pepper.
  7. Cover, cook on high (100%) for 6-8 minutes, stirring once.
  8. Place pasta in a large microwave-safe dish.
  9. Cover with water, cook on high (100%) uncovered for 10 minutes or until tender, drain.
  10. Reheat chicken mixture on high (100%) for 2 minutes.
  11. Toss chicken mixture through pasta with parsley and cheese.
  12. Serve with salad.
