Fettuccine with Piquant Mushrooms  Recipes

Ingredients :

250g

1/4 cup

fettuccine

butter or margarine

shallots, sliced

chopped fresh basil

capers, chopped

cream

fresh button mushrooms slices finely

freshly grated parmesan cheese

freshly ground black pepper

Method :
  1. Cook pasta in a generous amount of boiling water until just tender.
  2. Drain and keep hot.
  3. Melt butter and sauté shallots until just tender (2 minutes).
  4. Add basil and capers and cook another 2 minutes.
  5. Add cream and mushrooms and allow to cook rapidly for 4-5 minutes.
  6. Remove from heat.
  7. Add cheese and black pepper.
  8. Stir gently to dissolve cheese.
  9. Serve over pasta

Serves 6

May be served as an entree or as an accompaniment to grilled meats
