Fettuccine with Piquant Mushrooms  Recipes

Ingredients :

fettuccine

butter or margarine

shallots, sliced

chopped fresh basil

capers, chopped

cream

fresh button mushrooms slices finely

freshly grated parmesan cheese

freshly ground black pepper

Method :

Cook pasta in a generous amount of boiling water until just tender. Drain and keep hot. Melt butter and saute shallots until just tender (2 minutes). Add basil and capers and cook another 2 minutes. Add cream and mushrooms and allow to cook rapidly for 4-5 minutes. Remove from heat. Add cheese and black pepper. Stir gently to dissolve cheese. Serve over pasta.

Serves 6

May be served as an entree or as an accompaniment to grilled meats
