Cook the pasta according to
directions in a large quantity of boiling, salted water.
While the pasta boils, cook the
sausage in a skillet over medium heat.
If it's in casings, simply squeeze
it out into the pan and discard the casing.
Cook the sausage thoroughly,
breaking it up, until the edges start to brown, 7-8 minutes. (Note
that with most Italian sausage, the meat may still appear pink due
to the seasonings and preservatives in it.)
Drain off and discard most of the
fat.
While the sausage is cooking, put
the spinach in a small bowl and microwave it on high until it's
heated.
Sprinkle the flour over the
sausage and stir well.
Cook for a minute or two, and then
slowly stir in the milk, stirring well to prevent lumps from
forming.
Add salt, pepper, and chili flakes
and simmer gently, stirring frequently, until the sauce is
thickened.
Add spinach and drained pasta to
the skillet and toss well to combine.
Heat through and serve immediately
with generous toppings of Parmesan cheese.

Depending on the kind of sausage you use
and whether you add chili flakes, you can make this dish spicy or mildly
sweet, as you like.
