Achara Salad Recipe

Ingredients :

250g green papaya

1 red pepper

1 green pepper

2 carrots

15mm knob fresh ginger

2 brown onions

1 tsp black peppercorns

1 bayleaf

25g seedless raisins

200ml vinegar

salt to taste

freshly ground black pepper

Method :

Peel the papaya and cut into thin shreds. Cut the peppers, carrots and ginger into julienne strips and slice the onions.

Pound together the black peppercorns and bayleaf. Place all the ingredients into a mixing bowl and add the vinegar.

Allow to marinate for 4 minutes, then transfer to a strainer and press to remove the vinegar. Place in a salad bowl, season to taste with salt and freshly ground black pepper and mix well.

Serves 4
