Ayam (Chicken) Apretada Recipes

Ingredients :

1kg chicken (cut in pieces)

salt and black pepper to taste

flour for coating

oil for frying

4 cloves garlic (pounded)

125g tomato sauce

500ml water

1 small bay leaf

2 tsp dried oregano

1 green pepper (diced 1cm)

80g peas

1 medium onion, 1 medium tomato (finely chopped)

1 tbsp cornflour, 3 tbsp water (mixed)

Method :

Dust chicken pieces in flour, salt and black pepper. Brown quickly in hot oil till half-cooked. Remove. Heat oil. Saute garlic, onions, tomatoes, and tomato sauce in a separate pot till fragrant. Add water and let it boil. Add browned chicken, bay leaf, oregano and green pepper. Simmer for 30 minutes or till the chicken is tender. Add salt and black pepper to taste. To thicken gravy, add cornflour mixture. Add peas. Cook for another 3 minutes.

Serves 4
