Ingredients :

600g fresh pork

1 brown onion

50g green beans

2 cloves garlic

25ml vinegar

25ml light soya sauce

25g soft brown sugar

1/2 tsp salt

1/4 tsp white pepper

pinch of salt

1 bay leaf

100ml vegetable oil

25g all-purpose flour

Method :

Cut the pork into small, thin slices, slice the onion, cut the beans into 25 mm lengths and crush the garlic. Place the meat and vegetables into a saucepan, add the vinegar, soya sauce, brown sugar, salt, white pepper, salt and bay leaf and cover with cold water.

Bring to the boil and stir well, then lower the heat and simmer until the meat is cooked, approximately 15 minutes. Carefully remove the pieces of pork from the pan and drain thoroughly.

Heat oil in a frying pan and stir-fry the pork for 2-3 minutes, then add the flour and continue to stir for a further 2 minutes. Finally return the pork to the original pan, bring back to the boil and simmer for 2 minutes. Remove the bay leaf before transferring to a serving dish.

Serves 4
