Kinilaw na Isda Recipe

Ingredients :

500g lapu-lapu fillets

500 ml vinegar

50 ml fresh calamansi juice

1 brown onion

1 red pepper

1 green pepper

20 mm knob fresh ginger

10 fresh black peppercorns

salt to taste

white pepper

Method :

Cut the fish into bite-size pieces and place in a shallow dish. Pour half the vinegar over the fish together with the calamansi rice.

Allow to marinate for 2 hours, then remove the fish, squeeze away excess vinegar and place in a bowl.

Slice the onion, cut the red and green peppers and the ginger into julienne strips and crush the black peppercorns.

Add these to the fish, pour in the remaining vinegar, season to taste with salt and white pepper and toss to mix thoroughly.

Serves 4-6
