Oxtail Kare-Kare Recipes

Ingredients :

1 oxtail (1.5-2.5kg)

water for boiling

5 tbsp oil

5 cloves garlic (pounded)

1 medium onion (sliced)

1 banana blossom (sliced 1cm)

200g long beans (cut into 3cm sections)

4 eggplants (cut into 1cm slices)

salt and pepper to taste

 

All mixed:

70g rice (fried brown in a pan & ground)

3 tbsp crunchy peanut butter

180ml water

Method :

Cut oxtail into 1.5cm pieces. Boil once and discard water. Add water and boil again until tender. Saute garlic and onion in hot oil. Add to oxtail and let it simmer. Put in banana blossom, long beans and eggplants. Add enough water to form a thick gravy. Add the ground rice mixture to the oxtail. Season with salt and pepper. Bring to the boil again, then remove and serve.

Serves 6-8
